Here are different recipes that you can use to utilize everything in your garden

Pesto Recipe:

Ingredients:

  • 1/2 cup toasted pine nuts

  • 2 tablespoons lemon juice

  • 1 small garlic clove

  • 1/4 teaspoon sea salt

  • freshly ground black pepper

  • 2 cups basil leaves

  • 1/4 cup extra-virgin olive oil, more for a smoother pesto

  • 1/4 cup grated parmesan cheese, optional


Instructions:

  1. In a food processor, combine the pine nuts, lemon juice, garlic, salt, pepper, and pulse until well chopped.

  2. Add the basil and pulse until combined.

  3. With the food processor running, drizzle in the olive oil and pulse until combined. Add the parmesan cheese, if using, and pulse to briefly combine. For a smoother pesto, add more olive oil.

Potato Roast with Fennel

Ingredients:

  • 5-10 New Red potatoes

  • 1 stalk of fennel

  • Shredded cheddar cheese

  • 1 onion

Instructions:

  1. Preheat the oven to 350°

  2. Fill an 8x8 pan about halfway with diced New Red potatoes

  3. Dice a stalk of fennel and put it in with the potatoes

  4. Slice and onion and put it in with the fennel and potatoes

  5. Sprinkle with shredded cheddar cheese

  6. Mix it together

  7. Put the roast in the oven for about 45 minutes

Shrimp Caesar Salad

Ingredients:

  • Romaine lettuce (Can be substituted for any other type of lettuce)

  • Shrimp (can be cooked however you like them)

  • Caser Dressing

Instructions:

  1. Wash the lettuce: Either use a salad spinner or put the lettuce in a colander and rinse.

  2. Put the lettuce in a bowl and dress it in Caesar dressing.

  3. Dish out the lettuce and top with cooked shrimp

Tomato Basil Sauce

Ingredients:

  • 8 pounds of tomatoes, seeded and diced

  • 1/4 cup of chopped fresh basil

  • 1 large onion, minced

  • 3 cloves garlic, minced

  • 1/2 cup of olive oil

  • Salt and pepper to taste

Instructions

  1. In a large saucepan, cook tomatoes and basil over medium-low heat until the tomatoes are soft.

  2. Meanwhile, in a medium skillet, sautée onion and garlic in olive oil until onions are translucent

  3. Add onion mixture to tomato mixture and add salt and pepper. Let simmer on low heat for 2 hours or until thick.
